1. No idea. Our cross-country move was all-volunteer labor.
2. I see no reason not to relabel, and it might be fun to come up with the most unappealing-to-steal label ever. Say, for instance, "Cleaning supplies". Or better yet, "Sex toys".
3. For everything, I would consider a cost/weight ratio, for everything, not just food. You are paying by weight, right? (Cubic foot movers are notorious scams.) So I'd say anything that costs less than $1/lb shouldn't move--canned food, salt, large bottles of liquid stuff like laundry detergent.
