I've been doing some real cooking again, not just heating up frozen meals for CP and Mac (well, CP's been doing most of that) while I eat whatever I can stand that day. On Saturday, I made shrimp and mushroom risotto with a side of spanakopita; TJ's mushroom risotto turns out to be even better when you add shrimp, some Greek yogurt, some garlic, lemon juice, and a bunch of fresh spices. Tonight, we had fresh-baked rosemary bread (using a little of
senatorhatty's black truffle olive oil), artichokes with homemade aioli, and homemade avgolemono soup with garlic broth rather than chicken. At the end of the meal, the bread loaf was gone. I think Mac had like 5 slices. Since our rule is that we get to decide what he eats but he gets to decide how much, this has lately meant that sometimes we get a little less of something than we expected, because Mac decides that he wants a full adult portion or more.
Yes, I seem to be in a Mediterranean/Greek mood lately with regard to cooking. For whatever reason, it's what my instincts seem to want - well, that and MEAT, paradoxically. Wheat bread and pasta and most winter vegetables seem really unappealing; rice and spinach and lemon juice are awesome.
